For those of my Brothers and beautiful Sisters who are staying away from dairy, I find that wheat germ is a wonderful substitute for cheese. Please note it won't melt like cheese so you may not want to add it to this dish but rather sprinkle it on your portion after serving. I suggest putting a generous helping in a bowl and mixing in your favorite herbs and spices. I would suggest choosing ones that compliment this dish and the herbs and spices this recipe corset styled item used for prom situation ... calls for to keep the flavor consistent and not to confuse your palette. I initially grabbed this off the internet to save for myself but it's just too yummy to keep to myself. So I apologize to whomever shared this on my newsfeed for not crediting you for bringing it to my attention, but - Thank you for sharing!!!!!!!
p.s. Children love vegetables. They just might not like the way they are prepared. This would be a great way to bring them into squash appreciation. Fortunately, my son loves squash and so do I. Enjoy!!!!!!!! <3
